Halibut with Parmesan Sauce

This moist, light, local favorite fish gets a makeover with a rich decadent sauce. This Valentine’s day, treat your honey to this quick easy recipe for dinner. Start with 2 pounds of California Halibut rinsed and patted dry. This is for a family of four.  You can start with a store bought Alfredo sauce, or if you’d like to make your own Alfredo sauce there are many recipes available on the web. This recipe will look like you spent all day in the kitchen!

  • 2 lbs California Halibut
  • 1 6 oz  pkg Alfredo Sauce
  • 1/2 c. shredded Parmesan cheese
  • 3/4 c. garlic bread crumbs
  • 2 Tablespoons fresh chopped flat leaf parsley
  • salt and pepper to taste

Preheat oven to 350. Rinse and pat dry halibut and salt and pepper to taste. Top halibut with Alfredo sauce. Next, top it with shredded Parmesan cheese. Finally, top your fish with the bread crumbs. Cook for 15 to 20 minutes. Finish your halibut in the broiler to brown bread crumbs. This should really only take a few moments. Top with chopped flat leaf parsley and enjoy.

Recipe for Salmon Marinade

For a sure win the next time you’re cooking Salmon try this marinade recipe. This is a nice and light marinade that doesn’t compete with the fish. My husband always brags about how good this is.  This will make enough marinade for up to two pounds of Salmon.

  • 2 Tablespoons Olive Oil
  • 1 Clove Garlic (minced)
  • 2 Tablespoons Tarragon*
  • 1 Tablespoon Italian dressing
  • 1 Tablespoon Chives
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper

Combine all ingredients, heavily brush marinade over Salmon fillets. For best results, marinate for at least an hour.

*If using dried Tarragon, cut to 1 Tablespoon
